As we all settle back into the routine of school, after-school commitments, practice, and so many other activities that consume our schedules, the timeless question pops up: "What's for dinner?"  When you're on the go and need quick and easy meals for the family, here are some options that are convenient and require minimal preparation:

  1. Wraps or Sandwiches: Prepare a variety of fillings such as deli meats, cheese, lettuce, tomatoes, and condiments. Pack them with whole wheat tortillas or bread for a quick and portable meal.
  2. Pasta Salad: Cook pasta in advance and toss it with diced vegetables, olives, cheese, and dressing. It can be served cold or at room temperature, making it a great option for a quick meal.
  3. Quesadillas: Fill tortillas with cheese, cooked chicken or beans, and any desired veggies. Cook them on a griddle or in a skillet until the cheese is melted, and cut them into wedges for a tasty handheld meal.
  4. Mason Jar Salads: Layer your favorite salad ingredients in mason jars, starting with dressing at the bottom and then adding vegetables, proteins, and toppings. Seal the jars and store them in a cooler until ready to eat.
  5. Homemade Pizza: Use store-bought pizza dough or pre-made crusts and top them with sauce, cheese, and various toppings. Bake them ahead of time, and then reheat individual slices as needed.
  6. Veggie Sticks and Dips: Cut up fresh vegetables like carrots, cucumbers, bell peppers, and cherry tomatoes into sticks. Serve them with hummus, ranch dressing, or another favorite dip.
  7. Breakfast Burritos: Make a batch of breakfast burritos by filling tortillas with scrambled eggs, cooked bacon or sausage, cheese, and vegetables. Wrap them in foil or parchment paper for a grab-and-go meal.
  8. Smoothies: Blend together a combination of fruits, yogurt, milk, or juice, and any desired add-ins like spinach or protein powder. Pour them into portable containers or insulated tumblers for a refreshing meal on the go.
  9. Baked Chicken Tenders: Coat chicken tenders in breadcrumbs or crushed cereal, bake them until crispy, and pack them in a container with your favorite dipping sauces.
  10. Pre-packaged Snack Boxes: Create individual snack boxes with a variety of items like cheese cubes, crackers, sliced fruit, nuts, and a small treat. These boxes provide a balanced meal with minimal effort.

Remember to consider any dietary restrictions or preferences within your family when choosing ingredients. These meal ideas can be customized to suit different tastes and are perfect for busy families on the go.
